This homemade water kefir apple cider is a naturally fermented drink, packed with probiotics and just a touch of natural sweetness. It’s lightly fizzy, delicious, and contains only a very low amount of alcohol making it a great everyday wellness drink.
🥄Ingredients:
Water kefir from the first fermentation
1–2 sliced apples (or 20% natural apple juice)
A slice or two of fresh ginger (optional, for a spicy twist)
Fresh mint leaves (optional, for a refreshing herbal note)
📋Instructions:
Place the apple slices in a clean, airtight glass jar. You can mix sweet and tart apples for deeper flavor.
Pour in the water kefir (from first fermentation), leaving a bit of headspace at the top.
Add ginger and mint, if desired, to enhance flavor.
Seal the jar airtight and let it ferment at room temperature for 12- 48 hours, depending on temperature, sweetness of apples and your taste.
During the second fermentation, monitor the pressure—burp the jar if it ferments too quickly.
Once the taste and fizz are to your liking, strain the liquid, transfer to clean bottles, and refrigerate.

Using fresh fruit to flavour water kefir? Avoid leaving the cider too long at room temperature to prevent over-fermentation.
Before storing in the fridge, strain the liquid and re-bottle for best flavor and safety.
