Water Kefir with Basil and Frozen Watermelon

Ingredients:

For the basil syrup:

  • Fresh basil leaves
  • Water
  • Sugar (adjust to taste)
  • Lemon juice

For the second fermentation:

  • 500 ml water kefir (after first fermentation)
  • basil syrup

For serving:

  • Frozen watermelon, cut into cubes
  • Fresh basil leaves for garnish

Preparing the basil syrup:

  1. Soak the basil leaves in water for 24 hours.
  2. Strain the basil leaves. Add sugar and lemon juice to the water and heat until the sugar is completely dissolved.
  3. Let the syrup cool.

Second fermentation of water kefir:

  1. Add few tablespoons of basil syrup to the water kefir prepared after the first fermentation.
  2. Let it ferment for a day or so, depending on the temperature.
  3. After the second fermentation, place the kefir in the fridge.

Serving:

Cut the frozen watermelon into cubes and place them in a glass. Pour in the chilled water kefir. Add a fresh basil leaf for garnish and aroma.
