Dried Water Kefir Grains

Ingredients:

Dehydrated water kefir grains from organic production.

Activation:
  1. Dissolve 30g cane sugar in 300ml non-chlorinated water.
  2. Add kefir grains (5g), cover and ferment (22-25°C) for 2 days.
  3. Repeat the first 2 steps (2-5 times) until there are signs of activity.

Signs of activity: 

bubbles or fizz, reduced sweetness, a lightly tangy aroma and cloudy liquid.

Tip for faster activation:  

Use 25 g cane sugar and 5 g rapadura sugar instead of 30 g cane sugar to enhance mineral content and support fermentation. 

Water Kefir Recipe:
  1. Activated water kefir grains
  2. 600 ml water (non-chlorinated)
  3. 30 g quality sugar
Dissolve sugar in water at room temperature. Put kefir grains in the Kefirko then add water. Leave the lid slightly open and let ferment at room temperature (22-25 °C) for 24-48 hours. After fermentation, strain the kefir, fill sealable bottles and store them in the fridge.
Water kefir is ready to be consumed. Water kefir grains will remain in the Kefirko jar to be used for the next batch.
