Cake with kefir for special occasions

This is a cake with kefir usually made for special occasions like Easter. It’s also connected to many traditions as a symbol of peace and welfare. You can also prepare the cake in any shape you prefer.

Preparing this delicious and extraordinary cake with kefir is not as hard as it may seem at first glance. It just takes some time and patience.

Ingredients for the dough:

  • 2 eggs
  • 150 g sugar
  • pinch of bourbon vanilla
  • 100 g butter
  • 4 tbsp milk kefir
  • 200 g cake flour
  • 7 g baking powder
  • 150 g ground hazelnuts

For the icing:

  • homemade plum marmalade
  • 50 g ground roasted hazelnuts

How to prepare cake with kefir

Mix the eggs with a mixer and slowly add butter and sugar combined with vanilla and kefir. Mix well and slowly with a table spoon add flour that you previously mixed with baking powder. At the end slowly mix in the hazelnuts.

Prepare the mould for the cake. We used the one int the shape of a lamb. Coat it with butter and sprinkle with flour over it. Pour in the dough and bake on 200 °C for 45 minutes. When baked cool it off. Cut the cake in half and spread the marmalade in between. Attach the halves back together and cover it with marmalade on top too. Sprinkle with roasted hazelnuts over the marmalade. You can leave it for a day or two or serve immediately.

You can make this cake in the shape of lamb or any other shape. Depending on the moulds you have available. Baking it in a regular square baking pan will definitely not harm the taste either! Use your imagination and prepare the cake as you like it.
