Ginger water kefir fermentation

Ginger water kefir fermentation is simple to prepare and gives terrific results. There are not many ingredients or complicated steps in this recipe. Just regular 2-day fermentation and a day or two of second fermentation to have this delicious drink ready.

Ginger – a diverse and healthy spice

Ginger is one of our favourite ingredients in fermentation. Not only does it give that special kick in the flavour department but it’s also a natural remedy and keeps our immune system strong. It’s great for our digestion, prevents nausea and helps with common colds and flus. It contains natural oils that give it fragrance. The most important is gingerol which also acts as an antioxidant and reduces inflammation.

Water kefir – favourite fermented beverage?

Water kefir has many well-known benefits, especially on gut health. It’s packed with probiotic microorganisms which with regular consumption may have very positive effects on our microflora and overall health.

Ginger water kefir fermentation with steps

So, it seems a natural step to join these power foods together and create a delicious and healthy fermented beverage. This time we fermented ginger with kefir first then made second fermentation using ginger juice.

Water kefir with ginger
Ingredients:

  • 600 ml water
  • 3 tbsp water kefir grains
  • 3 tbsp unrefined cane sugar
  • 1tbs ginger flakes (or chopped root)

Add ginger flakes directly into the water kefir and ferment for 24-48 hrs.

Ferment water kefir with ginger in a glass jar for 24-48 hrs. Once you notice the beverage isn’t very sweet anymore you can stop the fermentation. This includes other signs that kefir has fermented, for example bubbles in kefir. Once you are satisfied with kefir, strain the grains out. Carefully remove the pieces of ginger from the kefir grains which can be used for new fermentation of water kefir.
It’s not a problem if you leave some pieces of ginger with kefir grains, but you will still have a slight taste of ginger with your new fermentation.

Strained water kefir with ginger is now ready for second fermentation.

Use quality ingredients. Our range offers organic cane sugar and organic ginger flakes.

Ingredients:

  • 600 ml ginger water kefir
  • 1 tsp organic lemon peel
  • Juice of one lemon
  • 1 tsp sugar or honey
  • 1 tsp ginger flakes

Soak ginger flakes in 50 ml of water. Then blend it and strain through a fine mesh. Dissolve sugar or honey in ginger juice. Add lemon peel and juice. Mix well. Pour this juice into the ginger water kefir and then divide it into capped bottles. Leave to ferment for another 24-48 hrs or until you notice more bubbles in the kefir. This fermentation is done at room temperature.
