Water kefir with violets – a perfect start to spring
Prepare this delicious water kefir and enjoy what nature has to offer.
Sweet smelling wild violets are also very tasty and healthy. They can calm inflammation. Blueberries rich in anthocyanin and antioxidants maintain vitality. Honey is rich with enzymes and minerals. Water kefir contains lactic acid bacteria and yeasts. These have a beneficial effect on the gastrointestinal tract and immunity.
Ingredients:
- 500 ml water
- 3 tbsp kefir grains
- handful blueberries and smelling violets
- 3 tbsp brown sugar
- 1 lemon juice
- 1 tbsp acacia honey (to taste)
Wild smelling violets are a bit darker violet than regular ones. Make sure you pick a spot away from dusty roads and other contaminants to pick them.
How to prepare infused water kefir
Take 3 tbsp of kefir grains and rinse them with lukewarm water. Put them in Kefirko jar and add 500 ml water. Stir in 3 tbsp of brown sugar until it dissolves. Finally, add handful of blueberries and wild violets that you rinsed beforehand. Then leave to ferment for 1 day.
Next day you can prepare the beverage. Carefully take out fermented blueberries and put them in a glass jug. Strain the kefir and pour it over the blueberries. Squeeze in the lemon and add honey to taste. Chill before serving. You can add violet flowers for decoration too.
