Fermented Carrots: Carrot Salad Recipe

This simple and delicious veggie treat is like all best things in life. The older it gets, the better it tastes! Fermented carrot salad is the perfect make-ahead dish — crunchy, tangy, and full of natural probiotics that support your gut health. Make it once and enjoy it all week long as the flavors develop and fermentation works its magic.

Carrots are packed with beta-carotene, which your body converts into vitamin A — essential for healthy vision. They’re also rich in antioxidants that slow down cellular aging and protect your skin from damage. For better nutrient absorption, enjoy carrots with a small amount of healthy fat.

Ingredients

  • 4 medium carrots
  • 1-2 onions
  • 1 tsp salt (non-iodized)
  • Spices: salt, black,cayenne, red pepper or chilli
  • A handful of chopped parsley
  • 1 tbsp apple cider vinegar (optional – for kickstart of fermentation)
  • 1 tsp honey (optional – for sweeter taste)

Instructions

  1. Prepare the carrots – Slice them finely and sprinkle with salt. Let sit for about 15 minutes to release natural juices or add a bit of water.
  2. Fry the onion – Lightly fry until soft. Spice it. Salt, pepper or chilli.
  3. Combine – Mix carrots, onions, parsley, and spices together. Add a little honey and vinegar for balance.
  4. Pack the salad into a clean glass jar, press down to submerge vegetables. Let it ferment at room temperature.
  5. Salad is ready to be eaten next day or you can leave it to ferment few days. After few days you can put it in fridge. The longer it ferments, the richer umami flavour and more probiotics it develops.
