Buckwheat is one of those grains that doesn’t need cooking — just soak it, ferment it with a bit of milk kefir overnight, and it’s ready to eat. It’s a simple way to enjoy something wholesome and delicious without heating it to death.
Why Soak and Ferment Buckwheat?
Raw grains like buckwheat are full of nutrients, but our bodies often can’t access them so fastly if they’re eaten straight. It is a natural procces that seeds are soaked and slightly fermented through time and slowly they start to release nutrients and also become available for our body and also easier to digest. When we soak and ferment them — especially with a touch of milk kefir — we activate enzymes and lactic acid bacteria. This “pre-digests” the grain, makes minerals like magnesium, zinc, and iron easier to absorb, and helps our digestion along. No cooking needed, no nutrients lost, just pure, ready-to-eat goodness.

Adding milk kefir to the soak gives friendly bacteria a chance to work. The result is a naturally fermented, probiotic-rich breakfast that’s gentle of our gut and still raw. Mild and naturally sweet that no added sugar is needed.

Recipe: Fermented Buckwheat with milk kefir (made by Enoznaravo)
Ingredients:
- buckwheat
- 1 tbsp flax seeds (optional)
- water
- few tbsp of milk kefir
For breakfast: grated apple, cinnamon, dried cranberries, extra milk kefir
Instructions:
- Combine buckwheat and flax seeds in a small bowl.
- Add water and milk kefir so grains are fully covered.
- Let soak overnight (8–12 hours) at room temperature to ferment.
- In the morning, top with fruit, cinnamon, and extra milk kefir.
You can make milk kefir at home in less than one day.

600 ml of milk
Put the grains in the milk and let ferment.
