Looking for the perfect summer refreshment with no (or minimal) alcohol content? This non-alcoholic cocktail, also known as a mocktail, is ideal for hot days, picnics, garden parties or simply — when you’re in the mood for something special, refreshing and naturally fermented.
It’s made from homemade kombucha, fermented strawberry juice and elderflower syrup, which together create the perfect balance of sour, sweet and aromatic. In addition to its wonderful taste, you’ll also love its visual appeal – with basil, pollen and a few ice cubes, you get a healthy, probiotic and elegant drink. This fermented mocktail can be safely served even to guests who avoid alcohol. Your friends will be impressed – it’s so chic!

RECIPE
80 ml kombucha
10 ml elderflower syrup
10 ml fermented strawberry juice (lacto-fermentation) *mineral water if needed
Mix in a glass and serve with ice, strawberries and a pinch of bee pollen.
*If you don’t have fermented juice, substitute with regular strawberry or berry juice and add a pinch of salt.
To make lacto-fermented strawberries, mix strawberries + 3% salt. Leave in a jar or vacuum bag for 5 days and use the juice. Save the strawberries to use with meals.
